Seafood Chowder Recipe

SEAFOOD CHOWDER

1 sm. onion, chopped
4 tbsp. butter
2 c. diced, peeled, uncooked potatoes
2 c. water
1 tsp. salt
1 1/2 lbs. frozen fish, thawed and cubed
1/2 lb. shelled and cooked shrimp, split
2 pkgs. frozen crab meat, thawed and diced
4 c. hot milk
2 c. light cream
White pepper

Saute onion in 2 tbsp. butter until tender. Add potatoes, water, and salt. Bring to boil, cover and simmer until potatoes are tender. Add fish, shrimp, crab meat and milk. Simmer over very low heat for 10 minutes. Add milk, cream and remaining butter. Heat, if necessary. Add pepper to taste.
